Role Definition
The Food and Beverage Head is in charge of all aspects of the food and beverage operations including quality of preparations, food menu, budgets, inventories, housekeeping & sanitation of dining, kitchen and surrounding areas, dress code and discipline of kitchen and service staffs in his department in various campuses.
Responsibility Deliverable
  • Co-ordinates with the different departments in varied campuses to fulfill their F&B requirements.
Tasks & Activities
  • Responsilble for the day to day operation of the food and beverage department.
  • Oversee the work of the reporting team.
  • Follow up on school policies, groundrules, regulations and procedures.
  • Responsible for the standards of service delivered in the dining halls, guest dining hall and all other food & beverage outlets by F&B employees. He has to ensure the quality of services in accordance with the expected  standard.
  • Plan the regular school menu and for special events.
  • Work on providing new dishes and variations in  method of preparation to break the monotony of food served.
  • Update any changes made in the school menu in the parent portal.
  • Ensure that ID cards are checked and scanned to differentiatie  home and school lunch.
  • Monitor that food is provided to outsiders only if they produce mess permission slips duly signed by the Admin or Academic heads.
  • Ensure the production of food on time and in adequate quantity and quality.
  • Plan for timely delivery of F&B services for field trips, events, guest services, Arram etc.
  • Ensure that all the F&B sections are organized, duties performed  and maintain their areas and equipment in a manner in compliance with the company policy and instructions.
  • The Food and Beverage Head is in charge of food costs, budgets, planning menus in consultation with Management.
  • Maintains effective cost control measures in all areas of F&B department including requesting for apt material procurements, consumption of resources, work scheduling and work load distribution.
  •  Keeps track of food wastage through a register and ensure that it is controlled.
  • Maintains the highest level of sanitation throughout all food and beverage areas.
  • Plans proper schedules for cleaning dining, kitchen, washing, mess store areas and ensure proper execution of the schedules.
  • Educate all F&B employees on personal hygiene and sanitation practices and oversee the execution of the same.
  • Responsible for the final delivery of all F&B products in accordance with high standards as per request raised by the concerned head
  • Inspect the quality and quantity and the safety of the raw materials purchased.
  • Countersigning of all requisitions and purchase requests.

  • Approves the indents for repairs of equipment before submitting them to the concerned department and keeps an updated record of each request.
  • Maintaining attendance register of F&B employees and forward the details to HR department every month.
  • Assists in recruiting manpower in F&B department.
  • Sets an example for the entire F&B department by always displaying impeccable behavior.
  • Maintain a smooth interaction between all his department  and other department  heads at all time.
  • Monitor the moral of all F&B employees and their relationship to each other, with the other departments.
  • Assist  those employees in the F&B department who are in need, ensure that all members in your department receive a complete familiarization and training for their positions.
  • Creating a high level of moral within the F&B department, developing a good working relation with all other through cooperation and communication.
  • To ensure all  members within the department follow all the rules and regulations.
  • To ensure all members within the F&B departments are treated in a fair and unbiased fashion without exception.
  • The appearance of the entire personnel reflects the reputation and image of the school, therefore a great deal of emphasis is placed on a professional appearance. Hence emphasise the highest standard of personal appearance of the employees at workplace which includes implementation of a uniform dress code. Staff in kitchen and serving counters to wear head caps and gloves.
  • To ensure that all members within the department are periodically trained and  evaluated.
  • Can approach the accounts department for monthly petty cash and the same will be provided to meet petty expenses and in areas which requires immediate payment. Prepare vouchers for all cash payments and get it signed from vendors.
  • Coordinate with external vendors for support during events.
  • Plan and setup kitchen, dining and other F&B needs in upcoming campuses.
  • Coordinate with government bodies related to implementation of laid rules, regulations and licences.
  • Handle any unrest that arises within the department and issues related to the department.
  • Conduct cookery and demonstration classes for students as per request raised by the academic team.
  • Organise cash and carry stalls for events to cater to the large crowd of guests or visitors.
  • Finalise and review the cost of items sold in stalls, breakfast and dinner costs with the Admin director.
  • Finalise token design and cost with Purchase manager for food tokens for staffs and their family staying in family quarters for Breakfast, dinner and holidays.
  • Perform other duties which are requested by the company.
  • Participating in High Tea sessions.

  • Increasing enrolments in mess across all campuses every year
  • Reducing the cost below the allocated budget
  • Timely maintenance of catering equipments and F & B infrastructure (maintain a log)
  • Maintenance of student feedback register everyday for breakfast, lunch and dinner
  • Employees in proper dress code, kitchen staff in uniform with caps, serving counter staff wearing caps and gloves
  • High standard of maintenance and cleanliness in kitchen and dining
  • Ensure those who are not eligible for school food doesn’t take school food. Maintain list of students and teachers who take lunch/evening snack from the biometrics.
  • Variety, student-happy menu to be prepared and shared in parent portal before June every year. Constant updates based on feedback and interesting elements to be brought into the menu.
